The “hot box” lets meat chill an additional 12 hours, up to 48 hours total, before it’s processed. The longer chill time adds value making the marbling in the meat more visible and the processed meat is easier to cut.

JBS says the expansion for the “hot box” will make its process more efficient. Grand Island encourages the expansion, moving a historic house to free up space for the new addition. At 2,600 people, JBS is the town’s largest employer.
