Producers selling locally raised beef directly to consumers experience the same challenges as other farmers who sell their produce at farmers markets or through other direct marketing outlets, according to Megan Bruch Leffew, marketing specialist with the University of Tennessee Extension Center for Profitable Agriculture. “Assessing market potential and developing marketing plans are crucial for successful beef producers,” she said.
In March, experts with UT Extension will conduct two separate beef marketing workshops at locations throughout Tennessee. A workshopfor livestock producers interested in “Marketing Live Animals for Custom Processing and Freezer Beef” will be presented by Rob Holland, Center for Profitable Agriculture director, and Dwight Loveday, UT associate professor of food science and technology. Topics will include regulations for selling live animals for custom processing, improving communications with the processor, how much meat to expect from a beef carcass, and how to develop a bill of sale to document live animal transactions.
Many beef producers are interested in selling live animals for custom processing and freezer beef, says Holland. “Producers often have many questions about how to sell their animals following Tennessee Department of Agriculture guidelines, and what options are available to both producer and buyer.” The workshop will answer such questions.
Also in March Leffew and CPA financial analysis specialist Hal Pepper, will present a separate workshop, “Locally Raised Beef Marketing.” Topics will include consumer preferences for local beef, with results of a Tennessee consumer survey; marketing lessons learned from state value-added beef producers, including results from focus groups; and how to develop a meat marketing budget.

All workshops will begin at 6 p.m. (local time) and end by 9 p.m. Each workshop also includes a meal. There is no charge, but preregistration is required, as space is limited in some locations. Each workshop fulfills 50 percent of a TAEP requirement in Value-Added sectors with farm-fresh meat projects only. Participants may attend both workshops for a full credit.
